This term is used in offline casinos and online gambling. Most often it can be found in the description of video slots. 

Description

Dispersion – the degree of deviation from the mathematical expectation.

In slot machines, variance refers to the level of possible deviation from the theoretical return during a certain gaming session. 

In practice, the higher the variance, the rarer but larger the video slot pays. Usually, automata with high dispersion are models with a small number of lines: one, three, five. Five-reel slots with twenty or more bands often have low performance.
